The food logistics sector focuses on logistics in the food market. The food logistics sector is one of the most important economic sectors in Germany. Who does the regulation apply to?
Food business operators involved in the primary production of food logistics must comply with the general hygiene requirements of Regulation No. 852/2004 Annex 1. These ensure in particular the protection of primary products from contamination and contaminant residues in food logistics.
Food businesses operating at the production, processing and distribution stages of food should comply with the general hygiene requirements of Regulation No 852/2004 Annex 2. These are requirements for premises, rooms, transport, personnel hygiene, etc..
Are there guidelines that food business operators have to follow?
In order to be able to legally comply with all requirements in food logistics, food business operators (with the exception of primary production) must comply with the principles of the HACCP concept through operational self-checks.
The HACCP concept is the systematic approach we use to ensure safe food in food logistics. The task of the concept is to consider hazards associated with the processing of food or emanating from finished products and to assess risks.
